Hello everyone! Lately I often hear that extra virgin olive oil is the best choice for cooking, but I wonder if it is suitable for frying. Will it not lose its beneficial properties when heated? Or is it better to use it only for salads?

The thing is a lower smoke point than refined olive oil benefits health. This means that when heated too high, it can start to smoke and lose its beneficial properties, turning into potentially harmful compounds. However, if you plan to cook at medium or low heat, extra virgin oil is fine to use, especially when it comes to lightly sautéing vegetables or steaming dishes. In this case, you can enjoy all its benefits without overheating. However, if you plan to cook at high temperatures, such as deep frying, it is better to choose another oil with a higher smoke point, such as refined olive oil or avocado oil.
